Favorite Homemade Dressing and "Stretching" Dinner!


Hello!  Welcome to my blog!  My name is Jeanette and I am a mom of two.  Here are a couple of photos from this past week.  My son is 6 years old and was so happy to be riding a train at the Erie Zoo and Waldameer this past week!  My daughter is age 8 and enjoyed the opportunity to celebrate Father's Day with a family lunch out over the weekend.  We have lived in Erie for 9 years now and definitely enjoy many things about this region.  My husband is originally from CT and I grew up 2.5 hours southeast of Erie, down in rural Elk County.  He and I are opposites in many ways but somehow it all works! 

Over this past week I have been using a new homemade salad dressing recipe that is so, so, SO GOOD!  It is also super-versatile, clean-eating and quite inexpensive.  I will be sharing the recipe below!

Clean Eating, Homemade Salad Dressing

I mixed up a batch of this dressing mid-week last week and we have enjoyed it many times since!  The first meal I was serving it was over a kale garden salad that I had made for guests.  That evening we enjoyed it again!  I took that same kale salad base and added some leftover quinoa that I had made over the weekend, some chicken prepared in our favorite marinade, this dressing and a dollop of guacamole that I had made the evening prior.

We have been eating clean since September 2013.  It does not have to be overly-expensive or complex!  In summary, clean eating really is quite simple!  Below is a basic marinade that we use often around here.  I am one who does not like my chicken to "taste like chicken" and this helps a lot with that!  Cooking chicken with this marinade and adding some veggies and at times a grain makes for an easy meal.


I used the homemade dressing a few more times over the past several days.  Tonight we finished it off while tossing it with an unexpected combination.  This is one of those weeks where I seem to have a lot on my mind.  I grabbed some groceries on Sunday but did not have a super-formulated plan!  I knew that I was bringing home workable ingredients and would figure it out as I went.  So tonight I was sauteing some chicken breast with vidalia onion and an orange bell pepper.  I had a cucumber but no more kale, romaine, spinach or whatever.  I also wanted to add a grain of some sort but was short on time and didn't feel like cooking one.  I looked at what I was working with for the dinner protein and thought that if I could stretch it a little bit, I would have enough to place in my husband's lunch for tomorrow.  So I looked for some beans in my cupboard and all that I found was garbanzo.  Beans are going to be one of your higher-quality carbs and also contain some protein.  Done!  No need to decide which bean to use... I just went with what I had and as always, gave them a thorough rinse before incorporating into my recipe.  And guess what??  This random combo turned out to be quite delicious!  And do you know why???  THE DRESSING.  For real.  You can put this one on anything!  The chicken, peppers and onions were warm as I topped the cucumber and beans with them.  I poured the dressing on top and - WOW - it became a delicious combo!

Favorite Homemade Dressing!

3/4 cup olive oil
1 cup red wine vinegar but you can use Apple cider vinegar. Both ways are great!
2 tsp garlic powder
2 tsp oregano
2 tsp basil
1.5 tsp salt
1.5 tsp pepper
1.5 tsp onion powder
2 tsp Dijon mustard 

** Shake all ingredients before serving.  
Dressing may be kept in the fridge 10-14 days while sealed tightly.

3 Ingredient "Clean" PB Pie Filling!


Hello!  Welcome to my blog!  Today we are taking a look at a recipe that I put together for last night's get-together with friends.  We are part of a "Life Group" through our church.  We have been getting together with three other families for nearly 5 years now!  We meet every couple of weeks and take turns hosting.  When it is your turn to host, you know that the NEXT time will be your turn to bring food!  We study the Bible together, talk about life and pray for each other.  Plus we enjoy some refreshments!

I have an 8 year old daughter who is full of ideas!  She began talking the other day about what we were going to bring to share with the group?  Yesterday morning she requested s'mores!  Umm...  we were not planning a campfire for last night or anything!?  My family began eating clean in September 2013 and I could not bring myself to purchase marshmallows to serve to everyone COLD with chocolate bars and graham crackers!  Don't get me wrong - I will enjoy a couple of s'mores this summer!  They will be scattered here and there during this season and I will be at a camp fire! 

So I suggested to my daughter that we make something with a graham crust?  She readily agreed.  I had an early morning dentist appointment yesterday and then we had to be picking up a few groceries and returning home before some of my family arrived from out of town.  Our days are busy but we find ways to make clean eating work.  Sometimes it involves a bit of compromise, which you will find below.  We stopped in at Wegmans (my favorite grocery store!) with no list or recipe.  So I was thinking off of the top of my head and we were preparing a recipe to amongst with 16 people.  Of course I made a double batch, which produced two PB pies.  I LOVE PB.  Too much.  Actually, almond butter is my REAL FAVORITE!!!  I will make this recipe again and will perhaps use almond butter to see how that tastes!  Regular PB pie typically involves cream cheese, Cool Whip and confectioner's sugar along with the PB.  We avoid 3 of those 4 typical PB pie ingredients... so, what to do?  Time to get creative!

For the filling, I used natural PB, plain Greek yogurt and lightly spotted bananas.  I also picked up a bag of Ghiradelli mini chocolate chips and split that between the two pies.  Now, I do have a recipe for a delicious "clean eating" pie crust and that will be included below.  BUT, there was not time for that extra step yesterday.  So, here was the compromise -- store-bought graham crusts which were ready to go in the foil pie pans.  Some days are like that!  

3 Ingredient Clean Eating PB Pie Filling
                                                            * makes 1 pie

3 1/2 Cups Plain Greek Yogurt
1 Cup Natural Peanut Butter
2 Small/Medium or 1 1/2 Large Bananas that are lightly spotted

3/4 Cup Mini Chocolate Chips
1 Pie Shell (graham crust or recipe below)

** I really liked the taste of this filling the way that we made it last night.  But I could see adding a dash of sea salt of teaspoon of vanilla for a slightly different flavor.

1) Use a food processor or a mixer and cream the bananas.  I like the spotty bananas for recipes like this.  You could use very ripe bananas but that is going to change the flavor profile and will be sweeter but will also have more of that "banana flavor" and not everyone loves that.  Myself included!   

2) Add the PB and Greek Yogurt and thoroughly combine the three ingredients until the mixture is smooth and creamy.  You may need to scrape down the sides and make sure that everything is combining well along the way.

3) Take your pie shell and add a light layer of mini chocolate chips to the bottom.  Pour in your filling.  Top with the remainder of your chocolate chips.   

4) Place pie pan in freezer for at least 2 hours.

5) Thaw a bit before serving, depending upon your desired consistency.  I had the pies in the freezer for 5 hours yesterday after making them.  I thawed on the counter for about 20 minutes and then they went back into the fridge until we were ready to serve them a short time later.  You want the pie to be not entirely frozen but to still hold up with a nice, firm texture.

6) We had a tiny bit of pie left over and I placed it in the freezer.  You could also keep it in the fridge if you want the texture to be more mousse-like.  

    Pie Crust Option:
  • 1 cup walnuts or pecans
  • 1 cup cashews
  • 2 tbsp honey or maple syrup
  • 3 - 4 tbsp almond milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • To make the crust, add crust ingredients to a food processor and process until a ball of dough forms, stopping and scraping the sides of the bowl. Start with a few tablespoons of almond milk and add more if necessary to bring to a desired consistency. Be careful not to over process the crust into a nut butter. Transfer the dough to a 9" pie dish and flatten on the bottom and sides with your hands to make a pie shell.

Calories Burned with the 21 Day Fix Extreme!?!?

Hello!  Welcome to my blog!  Today has been an exciting day here!!  We have been a homeschooling family this year and yesterday was our 180th day of academics!  Hurray!!  That meant that today was (almost) the start of our summer.  We are now working on putting together our year-end portfolio as we prepare to meet with our evaluator next week.  SO, this meant that today was Day #1 that was pretty much FREE OF ROUTINE!!!  I like systems, I do.  But I get all claustrophobic when locked into one.  I would just rather see where the day leads, for the most part anyways!

I am a member of a fitness/clean eating accountability group via a "secret" FB group and I posted this there two hours ago...

Well, this is what happened.
I slept in. Didn't look at the clock for 3 hours this morning as we enjoyed being done with academics and worked on our portfolio amongst other things.
The kids spent as much time as they wanted at the library.
We walked around "Five Below" for the first time and found a few items.
Shopping for seasonal flowers and then spending 2 hours outdoors. 
Making dinner.
Going out to make all of our workbook copies of selected samples.
And now???
I still have to do Extreme Lower Fix! 
Oh man! Hold me to it!

I can tell you right now that if I was not a member of a group like this, I more than likely would have skipped my workout today!  
So, I pressed play on "Lower Fix Extreme" from the 21 Day Fix Extreme, as that is what was up on the schedule for today.  And from having done this program back in February and March and returning to it for the first time again this past Monday... well, I knew enough to know that this particular routine is HARDCORE.  It should mean something when Autumn (creator of the 21 Day Fix) calls it her favorite.

I was off and running and made it through the first round of exercises and halfway into the second when it was time to exit the basement and help my husband with getting our 6 and 8 year old off to bed.  But now I was committed and knew that I would return!

Well, isn't this interesting??  For 20 minutes, all that I did was walk around part of the house and sit with the kids - yet I burned an additional 80 calories during that time??  Fantastic!!!  This is one MAJOR benefit of getting that heart rate up to a consistent upper 150's through lower body exercise.  The BURN continues!

I made it!!!!  Hurray!!!  This is a 33 minute strength/plyometric workout and I did have that 20 minute pause while getting the kids off to bed.  So, to burn 467 calories and REALLY work my legs and hold 15 pound weights during half of the workout - to me, that is worth making time for this in my day.  We are worth the effort we put in to ourselves!

Shakeology

Earlier this evening we had breakfast for dinner - mine was a slice of Ezekiel toast, 2 scrambled eggs and diced bell peppers.  I knew that I would be very hungry by bedtime with the big calorie burn and exertion of Lower Fix Extreme.  So I blended up a bonus Shakeology for today and split it with my husband.  It hit the spot and kept me from randomly munching throughout the evening.  We have been loving this flavor and I blend it up with a few slices of banana and frozen raspberries, plus 4 ounces of almond milk, 9 ounces of water and 4 ice cubes.  YUM!  It tastes like SUMMER!

Out of curiosity, I checked my calorie burn one more time.  Since finishing my workout 20 minutes prior, I had just been in the kitchen blending up my Shakeology and putting away a few things while checking FB.  So definitely no more physical exertion there, yet with having raised my heart rate during the workout itself, I burned another 90 calories post-workout while essentially doing nothing for 20 minutes.  Bonus, right??


Tomorrow will mark 11 years since the day my husband and I met.  I am incredibly thankful for him and am so glad to be able to say that I am currently in the best shape of my life as I enter my late-30's.  As a wife and mom, sister, daughter and granddaughter, my health is important to me!  Going from a size 18/20 to a 10/12 has been a great side benefit but the bigger boost comes from knowing that I am working to keep my heart healthy and I do this to honor those in my life.  I want to be able to keep up today and tomorrow with whatever life may bring!

Why We Aren't Homeschooling Next Year


Good morning!  This is a blog entry that I have thought about writing for some time now.  I get asked about this often and I know that for everyone who asks, there are others who wonder.  I have also been processing a lot of this myself and now that I have some time to sit down with it, I wanted to write this blog entry.

We have been a homeschooling family these past two years.  Our 2015-16 school year has just three days of academics remaining as I sit down to write this entry.  It has been a good year.  It has been a hard year.  I think that many can relate to that sentiment whenever it comes to raising kids!

Two years ago at this time, my daughter was just finishing up Kindergarten at our neighborhood school.  We had purchased our home specifically because we were planning to send the kids to Ridgefield.  One day in late winter, I began to think about homeschooling.  I mentioned the idea to my husband and he was surprisingly all for it!  And this is a guy who does not move quickly with new ideas - especially for those with which he has little point of reference!  THREE DAYS later, the news came out that our daughter's school would likely be closing, due to to financial woes brought on by mismanagement within our school district.  Hmm... so, we figured that if nothing else, homeschooling would be a back-up option.  As I explored it more, we became very excited about it and determined that no matter what happened with the district, we would go this route for 1st grade.  In the meantime, I worked hard with a group of neighbors to do all that we could to show the merit in keeping our very healthy neighborhood school.  It is not as though we live in a declining area!  But politics and closed-door deals are what they are and the neighbors really never had a chance of being heard -- hundreds of hours of research, brainstorming, practical action and all.

For the 2013-14 school year, our daughter was home with me for 1st grade.  Her brother went to preschool three mornings a week.  He attended the program at our nearby church.  Our daughter had been there for two years prior and he was entering his second year.  That year was a VERY GOOD YEAR and will always be dear to my heart.  We used curriculum from My Father's World and I loved it.  The year was simple and very special.  Each week we learned a new Proverb and how my daughter loved acting them out and creating songs and telling stories to illustrate them.  We both really spent time drawing close to God and to one another through the use of their 1st grade curriculum.  I would highly recommend it to anyone.  I very much liked their math and language arts especially.  It makes my heart ache a bit (or a lot) to know that chapter in our life is now behind us.  Our son enjoyed his three morning a week preschool program and we did light, hands-on work with him on the off days.       

As we planned the 2014-15 school year, we enrolled the kids in Classical Conversations, which is a homeschooling campus that meets one day per week.  I was to be a tutor there, working with my son's pre-K/K age group.  Classical Conversations was also our curriculum for everything beyond Math and Language Arts.  The content developed by CC is INCREDIBLE and I learned SO MUCH myself this year!  As did the kids.  And our daughter had a FABULOUS classroom experience there, as well as fun with older friends each week during the lunch time and free time.  After 5 weeks, it became apparent that it was just not going to work well for me to continue tutoring our son within his class.  It was a bad dynamic that was not good for anyone.  And let me just say that this was the most painful and self-doubting chapter that I have EVER had in my life as a mom.  It was ugly.  Some people came alongside me and were very helpful in the midst of it all.  We had learned in August that our daughter had some pretty significant visual tracking struggles and we had to launch into some INTENSE daily home therapy with her (1 hour+) a day plus weekly visits to OT and frequent visits to her vision doctor.  The crucible was September - December.  Through February, this was still a big part of our day.  Then the therapy exercises were reduced in exchange for more actual reading work where her progress with the principles was put to the test.  My daughter's 2nd grade academics took longer than my son's K work.  It took a bit longer to work on her CC projects as she was older than him.  This whole perceived equation of time left our son feeling shortchanged.  Going to a weekly classroom and then having to share me with that group of students pushed him over the edge.  He was so fragile at that point and just wanted to be heard.  He began acting out like never before.  Plus I began to undeniably see that he processed things differently than others.  The struggle there was heart-wrenching and even the memory of it has tears streaming down my cheeks as I type these words.  He was already seeing a Speech Therapist weekly for his enunciation work.  That was not a big deal.  When she gently mentioned doing some evaluation for his sensory processing challenges, I was not surprised.  So he did then begin with Occupational Therapy and we have all learned a lot and things are coming along.  I love him more than I can say, quirky ways and all.  He has my heart.  He is wild and tender and quite predictable with how he likes what he likes.  He is also a giver and his first thought is to share whatever it is that he has.  My daughter is intuitive, creative and thoughtful but also has the attitude of a firstborn daughter.  I can say that because I am one as well!

In addition to homeschooling these two this year, I have just completed year one of a three year commitment to serving as Team Leader of Women's Ministry at our fairly large church.  It has been an exciting year there and certainly added to my plate.  But the time invested was well spent and I look forward to all that is yet to come!

I also work my home business and my family relies upon this.  I am a health coach and lead others in making the same changes that have been so meaningful in my life as I have said good-bye to 50+ pounds and hello to many other things!  We eat clean and I do daily 30 minute home workouts.  I host FB-based accountability groups as well as leading and developing my team of coaches.  I tend to work my business for 30 minutes first thing in the morning, 5-10 minute pockets throughout the day and then focused time from 8:30 to 11:30ish each evening.  God has blessed my work and my business is quite successful and is on the verge of the next chapter on top if it all!  This is a very exciting time there!  Not to mention that more than 100 people have changed their health through my challenge groups this past year!!  Pretty neat!

Oh - and I have a husband.  He is my biggest fan.  He helps out around here.  He takes on different household projects that other men may not.  He cheers me on in my work and does not disparage any of it.  It is a tremendous blessing to have his support in all of this.  I do feel badly that I have not invested time with him as I should.  We have been going through this season and know that it will not last forever.  Thankfully, right now our kids are out of town at my parents' house for the weekend and that is soooooo nice!!  My husband is sleeping in because he loves that.  I was up at 5:30 because that is just how I am wired.  So I decided to sit down and write this entry.

A few months ago, I received a post card for an open house at our local Montessori Charter School.  I began to do some research and could see this as being a potential fit for our two kids!  Our creative daughter and kinetic-learner son would both benefit from this hands-on approach to learning.  I liked the 12:1 classroom ratio which is quite different from our local public schools.  I began to learn more about their learning philosophy and became excited at the potential for my kids to be a part of this!  It didn't take much thought to discern that although our son has done very well here at home with his K academics, were he to enroll in school, he really should enter as  K student rather than a 1st grader.  His birthday is close enough to those who have waited a year to start school.  It will be doing right by him to ease him into a K classroom rather than walking into the expectations of 1st grade world.  He is a busy kid.  His mind works just as hard as his body!  He gravitates towards playing with those younger than him.  He puts a ton of focus into projects and having a boost with some familiarity of the academics will allow him to direct his energy into modulating himself throughout the day.  I have to say that I am a bit anxious on how all of that is going to go!  Our daughter entered the lotto enrollment system at the school, as we hoped and prayed that Lord-willing, she would secure a spot for 3rd grade.  She did!!!!  She is so excited!  The social part of school is going to be soooo natural and enjoyable for her.  Academics may be another story.  All of those hard-earned months of progress made with vision therapy have still left her a bit behind grade-level on her reading.  But that tracking deficit had to be attacked and dealt with in order for her to really learn to read well.  I know that God will see us through this transition for both of the kids. And for myself!

So, why??  Why aren't we homeschooling next year???

Well, our daughter began asking this winter if she could go back to school for 3rd grade.  I was willing to prayerfully entertain the idea.  Our son would be happy to stay home forever.  But in my heart, I feel that he needs to learn to adapt to the structure of this world before he gets older and it becomes that much more difficult for him, given who God has created him to be.  For the sake of investing time in my marriage, I can not continue indefinitely to work most evenings, between my business and leading Alliance Women.  I have been stretched T-H-I-N this year, to say it optimistically.  God has sustained me.  Some key friends have really been there for me even when I could not be the best friend to them.  I have not done so well with "margins" this year.  It has been a worthwhile chapter although I will be relieved when it is complete.  

What am I concerned about as I picture making this change??  First, let me just say that it does pain me to see that the kids are gone for 7 hours a day at school.  It does seem to be LONG.  I imagine that I will learn to adapt to that??  It will be amazing to be able to get all of my own work done during the day and then really be present for everyone more often in the evenings.  I don't even know what that may be like?  How will my sparkly, sensitive, people-pleasing daughter do as she adjusts to 3rd grade dynamics and how people are in this world. I mean, this girl already asks the big picture questions about life on a REGULAR basis.  We talk about them together.  My mind is boggled as I contemplate what sort of questions this next year will bring???  And how will by son do, functioning all day outside of his current comfort zone?  My heart hurts at the thought but it has the potential to be very good for him.  And what about spiritually... here they will be headed out into the big world.  Am I really ready for choosing that?  Yes.  I feel that now is the time to venture into this new chapter.  I will be praying so much for them and their teachers and friends and their families. 

We are going to have the kids at school this year and will re-evaluate things next winter/spring.  Perhaps at that point we may even decide to return to homeschooling for the rest of their elementary years, at least?  Or perhaps they will continue on at Montessori and we will be fully settled into school world.  Who knows?  But it is time to step out of the boat and into the water and keep our eyes on Christ as we walk forward in faith that we are following Him in this decision for this time in our lives.  

I am excited about all that is to come.  I have lost myself a bit in the midst of this past year.  I juggle so many things during the waking moments of the day.  Taking the kids with me EVERYWHERE (minus my annual gynecological visit!) during the daytime of this year has been a stressful challenge at times and a delight at others.  It will be sooooo weird to be without them less than three months from now.  First I am going to really, really, really enjoy this summer.  I want all of us to look back on it as a highlight.  My biggest hope right now as a mom is that when they remember me and this time in our lives, that they will hear laughter in my voice, see a smile on my face and feel the warmth of my hands on their shoulders and feel the love of Christ overflowing from my heart into their own.

My View - Memorable Days!

Good morning and welcome to my blog!  My name is Jeanette and I am a mom of two early elementary age kids.  I am currently making my way through the PiYo program and those who follow me on FB are accustomed to seeing PiYo photos like the one above.  It is hard to put into words the increased flexibility, balance and range of motion that I have found with this one!  I have been a Team Beachbody coach for nearly 15 months now and I NEVER stop being amazed at the things that I see and hear in the course of a day or week.  I mean seriously.  So this blog entry is going to include some of the highlights of the past few days.  Some of this may surprise you!  

Last night there were three things that I came across within a 10 minute period that just resonated so much within me!  Here is the "what" and "why".

1) I was scrolling FB last night and WOW - there was one of my FB friends who is a coach on our larger team and she was the $1,000 winner of the Beachbody Challenge!  Ashley's story really just says it all.  It is not just the losing 76 pounds after a devastating miscarriage.  It is not just getting her thyroid balanced despite hypothyroidism.  It is gaining a new outlook on life.  Wanting to leave the house again and being ready to embrace life. Reading about her coach and being in a challenge group... so neat!  This is a snapshot of why I love what I do each day!  Check out Ashley's story and photos here!

2) I hear ALL THE TIME how it "costs too much" to eat healthy.  This discussion was even a feature story in our local news page via FB just yesterday.  It makes me sad that people don't necessarily see the high price they are paying big picture when NOT eating healthy.  As I was thinking about that last night, this video made by Autumn Calabrese (mom and creator of the 21 Day Fix) popped up in my news feed.  Here you go - Check out Autumn and her little guy on video here.  Her video description: The number one reason I hear why people don't eat healthy is that it is too expensive. 3) And finally, last night I came across this article and it was an EXCELLENT summary of the "what" and "why" this is all coming together!  Do you want to change your life?  Do you feel like it is going to be too expensive?  How does Shakeology compare to other things out there?  Take a LOOK AT THIS INFO!!! 

I currently have two challenge groups running ("secret" accountability groups on FB!) and these groups are on Day 6 and Day 20 today.  Plus I have other challengers who began earlier this year and have since become coaches on my team.  Now that I have personally been at this life change since September 2013, it is encouraging to always be hearing the perspective of those who are not so far from the starting line.  My next group will begin on June 1st and you are invited!  See details at the end of this blog entry.

Some things that had me cheering the past few days??

A friend who began as a challenger and is now a coach shared how she bought new bras yesterday - band size is down 4" from where she began this past February!!!

Challenger sharing with me that since starting Shakeology and clean eating, her almost monthly yeast infections have vanished!  Tested sugar and cholesterol and they are both down these days!  Shakeology is proven to lower cholesterol (my own dropped 44 points!) and is also known to be effective in really shifting PCOS, Crohn's, IBS, Inflammation and a bunch of miscellaneous things!  This is NOT some "magic powder".  It is truly top nutrition and when we fuel our bodies well, it is AMAZING what we will see change along the way!

ANOTHER coach on our team shared yesterday that she is expecting!  It is no coincidence that this keeps happening.  Myself, my tubes were tied 6 years ago.  But when I began my lifestyle change in September 2013, I was amazed at how out of nowhere, after 22 years of an irregular cycle, it was "suddenly" regular that first month and has been ever since.  Another challenger shared last week that she has experienced the same!  It is amazing what great nutrition can do when you are incorporating Shakeology along with clean eating.  My migraines also disappeared

Brand new challenger who can't believe that her old cravings have disappeared and she is following the plan 100%.  When asked what is making the difference?  "1. Shakeology. I've tried other protein powders before and not had this kind of success. It's yummy and satisfying. The other kinds I've bought I would try to choke down and they left me hungry. And I mean well-respected brands like "Garden of Life." 2. That I paid a nice chunk of change for the program. Buying a DVD for $10 and don't use it? No big deal. Buy 21 day fix and don't use it? Ouch. Haha. Those are two things making the difference I think.  Shakeology has immediately taken away my carb, sugar, diet soda and sugary coffee drink cravings. I don't even understand it! But I like it!  I think Beachbody is really a cover for Willy Wonka. He's finally perfected that gum that tastes like a whole meal (remember that scene in the old movie?) but used the technology for Shakeology. A challenger who has become a coach shared this on her page the other night and I just loved it!  "This is why I am a Beachbody Coach: I know DMV are not the best photos, but neither is the comparison. I have really struggled with my fitness journey because I feel great, but the scale hasn't moved as much as I wanted and I know I need to take off a lot before someone notices. But tonight I pulled out my license & was shocked. That was just about a month & a half ago. By George...it's working!"

Rest day today on the PiYo calendar and I fit in some extra "work" time this morning. 

Why the ""????

Because this truly does not feel like work yet it is my job!

Being able to work from anywhere, when it is convenient for me is such a benefit!
This morning I am checking in with current challengers and we are keeping each other accountable on the journey. These women become friends and I love that!

I am in conversation with those pondering "if" this is the time to make their own life change and could it work for them? That is a vulnerable spot to be in and I remember it well. 

I am brainstorming ideas with my team and these are some INCREDIBLE women. We are in a variety of places this morning - in the hospital with a newborn, on a road trip to see family, getting ready to go to a regular job, feeding babies, getting kids prepped for school. Everyone connects and it is amazing to hear of the progress that is taking place. 

All in all, I am just plain thankful!

Last night at dinner I was able to share with my husband some exciting things that are happening in my business. Do you know how much that means as a mom who is juggling lots here at home? I thank the Lord that I can contribute here and invest in others whole investing in our own future!

Meal Plan PiYo Week #5 with Grocery List and Recipes!

Hello!  Welcome to my blog!  I am about to begin Week 5 of PiYo and have been working on my meal plan for the upcoming week.  I have my grocery list together and will include that below.  I will also link in the recipes used.  Please comment if you would like to receive an emailed copy of this meal plan word document!

I have completed a variety of Beachbody programs over the past 18 months and PiYo is a favorite of mine!  I first did PiYo in Summer of 2014 when it was brand-new.  After doing Insanity Max 30 and the 21 Day Fix Extreme this past winter, I was ready to return to PiYo once again.  This past week I shared the following on my Facebook page:

trying to have the best body on the beach
training for a marathon

on a strict diet
basing my self-worth on my appearance

I AM:
wanting be a great example to my kids, to be healthy for my sake and theirs, to feel good myself and to become stronger each day!

I have many people ask me about the difference between the PiYo Meal Plan and the 21 Day Fix Nutrition?  Basically, some of the portion sizes vary a bit.  Bottom line, the main differences for me are that I am eating one less grain, fruit and healthy fat serving and I am eating one more protein and veggie serving.  This is actually pretty similar to what I was doing when I switched to a stripped version of the 21 Day Fix meal plan.

I do tend to rotate through the same snacks and lunches on a regular basis.  I mix things up a bit at dinner.  My children are ages 6 and 8.  Other than my own full serving of morning Shakeology, we pretty much eat the same things.  Clean eating has been beneficial to my entire family since we first began this adventure back in September 2013.  My life has changed drastically since that point!  Here are the recipes for what we are having for dinner here this week!

Monday - Wegmans is our local grocery store and they make a very good organic Garlic Sesame Asian sauce.  I tend to naturally use sauces very sparingly.  As a busy mom, finding a store-bought item like this to use every now and then is what makes clean eating work for us!  I will thinly slice chicken breast and then toss it in this sauce while cooking.  Use whatever veggies you like plus a simple brown rice and serve this one fresh from the skillet! 

Tuesday - My Beef Lettuce Wraps are based on this recipe from the 21 Day Fix Extreme.  Simply substitute flank steak in place of the chicken.

Wednesday and Thursday - BBQ Chicken is a family favorite around here.  Along the lines of the "sauce perspective" from Monday, I will lightly use Wegmans Organic BBQ sauce.  It is much better than many of the mainstream options out there.  OR if you would like to make your own BBQ, here is a recipe that looks pretty good!  My Coconut Veggies are a recipe from the 3-Day Refresh and it has become one of my own favorite ways to enjoy cooked veggies! We have come to really enjoy sweet potatoes and they are superior to regular potatoes when it comes to nutrition.  There is nothing wrong with including a balanced amount of carbs in our diet.  We just need to choose well! 

Friday - Citrus Grilled Chicken is based on the Insanity Max 30 recipe for citrus steak.  You will use 1/2 cup fresh lemon or lime juice, 1/2 cup fresh cilantro, 4 tsp. olive oil and 4 cloves of garlic.  Combine these items and marinate the chicken in this mixture.  Then grill the chicken!  The Rosemary Mushrooms are also from this program and they are sooooo good!  Heat oil in a large, non-stick skillet over medium heat.  Add 2 cloves of finely chopped garlic and 4 cups of mushrooms.  Stir frequently while cooking for 5 minutes or so until juices from the mushrooms have evaporated and they are tender.  Add a bit of fresh rosemary and bit of sea salt.  Stir occasionally, cooking for another 2-3 minutes.  Mash your sweet potatoes with a bit of cinnamon and add a side salad for a lovely meal!

Saturday - I am not really a fan of seafood!  But this is one way that I do actually genuinely enjoy salmon.  :)

Sunday - This Cobb Salad recipe is from Insanity Max 30 and has become something that my family requests over and over again!  
 


The Cobb Salad includes a spinach/romaine mix, cucumber, tomatoes, mushrooms, bell peppers, hard-boiled egg, low-sodium nitrate free turkey bacon, avocado and fresh lemon juice.  We also add kidney beans to ours.
