Nutty Pumpkin Chocolate Chip Oat Bars

Good evening!  Welcome to my blog!  I am a mom who is determined to AVOID eating the Halloween candy myself this season.  Making a special pumpkin/chocolate/nutty/oat treat like this keeps me from feeling deprived yet also cuts me off from starting my slippery slope of unwrapping a single piece of what the kids are bringing home lately!  We eat clean around here but do follow an 80/20 rule.  We eat very clean about 80% of the time.  I am perhaps closer to 90% myself.  I just feel my best this way!  But we also live life in the real world and I would never want my kids to have some sort of healthy foods complex!  They have learned a lot about nutrition at ages 6 and 8.  We have been eating clean for two years now and it honestly is not a fight at all!  And for that I am deeply thankful!  They have seen huge changes in me (loss of 60 pounds and health transformed), many family members and quite a few of my friends.  I love that my daughter (approaching her 9th birthday) is busy thinking of ways to show others that healthy choices have many benefits.  

But, back to tonight's delicious recipe!!!  You have got to give this one a try!  First, I am just going to say that I SO appreciate baking recipes that do not use eggs.  I am not "anti-eggs" one bit!  We eat them often.  But with my little guy as my #1 chief kitchen helper and my own freak-out tendencies with food safety, avoiding raw eggs while cooking with him makes me so much more relaxed!  Sample all the batter you want!  Go ahead and handle it and just wipe your hand with a dry paper towel.  Under-baked a bit?  No worries!  Quite a contrast with my "hazmat!!!!" mindset in other cooking situations!!!  

Tonight I wanted to make something with pumpkin, nuts and oats.  Chocolate is always a bonus!  Especially during key times on the calendar!
 
This recipe is based upon a recipe that I found on Ambitious Kitchen.  I took a look at that recipe and just made it more "us".  My edition is found below!  And I do LOVE nuts.  So I added some!  The only sugar that we have around here is Coconut Palm Sugar.  It happens to be low-glycemic and is an easy substitution in any recipe. 
 
Nutty Pumpkin Chocolate Chip Oat Bars
 
Ingredients
  • 2 cups old fashioned oats
  • 1 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups canned pumpkin
  • 2 teaspoons pure vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/2 cup coconut palm sugar
  • 1 tablespoon coconut oil, melted
  • 1/2 cup chopped unsalted nut of choice
  • 1/2 cup mini chocolate chips, set aside a few to sprinkle on top before baking
Instructions
  1. Preheat oven to 350 degrees F. Prepare 9" baking dish.
  2. Make oat flour: Place oatmeal in blender or food processor and blend until oatmeal resembles flour.  It will be a coarse flour and need not be entirely fine.
  3. Place oat flour in a bowl. Whisk in pastry flour, baking powder, baking soda, salt, cinnamon and cloves; set aside.
  4. In a separate large bowl, whisk together pumpkin, palm sugar, vanilla, oil and applesauce for 1-2 minutes until the consistency is smooth and creamy. Slowly add in oat flour mixture and mix until just combined.
  5. Gently fold in the chopped nuts and most of the chocolate chips.  Save a few to sprinkle on top if desired. Pour batter into prepared pan and sprinkle remaining chocolate chips on top. Bake for 15-20 minutes or until toothpick inserted into center comes out clean or nearly clean. Cool 10 minutes on wire rack.  Enjoy warm if desired!

3 Ingredient "Clean" PB Pie Filling!


Hello!  Welcome to my blog!  Today we are taking a look at a recipe that I put together for last night's get-together with friends.  We are part of a "Life Group" through our church.  We have been getting together with three other families for nearly 5 years now!  We meet every couple of weeks and take turns hosting.  When it is your turn to host, you know that the NEXT time will be your turn to bring food!  We study the Bible together, talk about life and pray for each other.  Plus we enjoy some refreshments!

I have an 8 year old daughter who is full of ideas!  She began talking the other day about what we were going to bring to share with the group?  Yesterday morning she requested s'mores!  Umm...  we were not planning a campfire for last night or anything!?  My family began eating clean in September 2013 and I could not bring myself to purchase marshmallows to serve to everyone COLD with chocolate bars and graham crackers!  Don't get me wrong - I will enjoy a couple of s'mores this summer!  They will be scattered here and there during this season and I will be at a camp fire! 

So I suggested to my daughter that we make something with a graham crust?  She readily agreed.  I had an early morning dentist appointment yesterday and then we had to be picking up a few groceries and returning home before some of my family arrived from out of town.  Our days are busy but we find ways to make clean eating work.  Sometimes it involves a bit of compromise, which you will find below.  We stopped in at Wegmans (my favorite grocery store!) with no list or recipe.  So I was thinking off of the top of my head and we were preparing a recipe to amongst with 16 people.  Of course I made a double batch, which produced two PB pies.  I LOVE PB.  Too much.  Actually, almond butter is my REAL FAVORITE!!!  I will make this recipe again and will perhaps use almond butter to see how that tastes!  Regular PB pie typically involves cream cheese, Cool Whip and confectioner's sugar along with the PB.  We avoid 3 of those 4 typical PB pie ingredients... so, what to do?  Time to get creative!

For the filling, I used natural PB, plain Greek yogurt and lightly spotted bananas.  I also picked up a bag of Ghiradelli mini chocolate chips and split that between the two pies.  Now, I do have a recipe for a delicious "clean eating" pie crust and that will be included below.  BUT, there was not time for that extra step yesterday.  So, here was the compromise -- store-bought graham crusts which were ready to go in the foil pie pans.  Some days are like that!  

3 Ingredient Clean Eating PB Pie Filling
                                                            * makes 1 pie

3 1/2 Cups Plain Greek Yogurt
1 Cup Natural Peanut Butter
2 Small/Medium or 1 1/2 Large Bananas that are lightly spotted

3/4 Cup Mini Chocolate Chips
1 Pie Shell (graham crust or recipe below)

** I really liked the taste of this filling the way that we made it last night.  But I could see adding a dash of sea salt of teaspoon of vanilla for a slightly different flavor.

1) Use a food processor or a mixer and cream the bananas.  I like the spotty bananas for recipes like this.  You could use very ripe bananas but that is going to change the flavor profile and will be sweeter but will also have more of that "banana flavor" and not everyone loves that.  Myself included!   

2) Add the PB and Greek Yogurt and thoroughly combine the three ingredients until the mixture is smooth and creamy.  You may need to scrape down the sides and make sure that everything is combining well along the way.

3) Take your pie shell and add a light layer of mini chocolate chips to the bottom.  Pour in your filling.  Top with the remainder of your chocolate chips.   

4) Place pie pan in freezer for at least 2 hours.

5) Thaw a bit before serving, depending upon your desired consistency.  I had the pies in the freezer for 5 hours yesterday after making them.  I thawed on the counter for about 20 minutes and then they went back into the fridge until we were ready to serve them a short time later.  You want the pie to be not entirely frozen but to still hold up with a nice, firm texture.

6) We had a tiny bit of pie left over and I placed it in the freezer.  You could also keep it in the fridge if you want the texture to be more mousse-like.  

    Pie Crust Option:
  • 1 cup walnuts or pecans
  • 1 cup cashews
  • 2 tbsp honey or maple syrup
  • 3 - 4 tbsp almond milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • To make the crust, add crust ingredients to a food processor and process until a ball of dough forms, stopping and scraping the sides of the bowl. Start with a few tablespoons of almond milk and add more if necessary to bring to a desired consistency. Be careful not to over process the crust into a nut butter. Transfer the dough to a 9" pie dish and flatten on the bottom and sides with your hands to make a pie shell.

PB Banana Pumpkin Cookies

Hello!  We have had a couple of chilly days here in Erie, PA and this has us thinking about baking here in my home.  It is hard to believe that we were at the beach (in our swimming suits!) just three days ago!  It was in the 80's on Wednesday.  The past couple of days have dropped to the 50's!  

The kids have been asking for cookies.  I myself have been in the mood for some chocolate.  We put this recipe together this evening and I have to say that these cookies are GOOD!  They are poofy but still chewy.  They are dense rather than cake-like.  These cookies involve a little bit of everything!  I didn't include Oatmeal and Chocolate Chunk in the title as that would have been a bit much.  I did write down this one as we went and I am glad that I did.  We will be making these again!!  No adjustments needed here.  :)

PB Banana Pumpkin Cookies

1 Ripe Banana - Mashed
1/2 Cup Pumpkin Puree
3/4 Cup All-Natural PB
1 Egg
1/4 Cup Raw Honey
1/3 Cup Coconut Palm Sugar
1 Teaspoon Vanilla Extract
1/4 Teaspoon Salt
1 Teaspoon Baking Powder
Dash of Cinnamon
2/3 Cup Quick Oats
1 1/2 Cups Whole Wheat Pastry Flour
Dark Chocolate Chunks (I used part of a 72% Cacao Bar)

Preheat oven to 350.  Cream banana, pumpkin and PB.  Add in your egg, honey, sugar and vanilla.  Mix until combined.  Fold in your dry ingredients: salt, baking powder, cinnamon, oats and flour.  Mixture will be thick and sticky!  

Drop by rounded tablespoons onto a baking stone.  No need to prepare this type of surface.  After dropping by tablespoons, flatten slightly.  Take a piece of dark chocolate and press it into the top of the cookie.  Bake at 350 for 10-11 minutes.  DO NOT over-bake!  Cookies are "poofy" but will cook through quite well.

Healthy Apple Pie

Hello!  Welcome to my blog.  My name is Jeanette.  I am a Team Beachbody Coach who is a homeschooling mom with two children who are ages 5 and 7.  We live in Erie, PA.  We have been seeing signs for the past few weeks that we are in for an early fall.  Local apples began ripening the first week of August!  We are already a couple of apple totes into the season here.  My son is an apple fanatic and typically eats two per day!  This week we are loving the "Paula Reds" from local Burch Farms.  My daughter began asking the other day if we could please make "a healthy apple pie"?  We have been eating clean here for the past 11 months and I have not made a pie during that time!  Well, there was one odd attempt at a chicken pot pie that was more of a dumpling or biscuit sort of thing.  The "clean eating" biscuits for that recipe were actually inedible!  Even by the standards of my husband who is pretty open-minded with my kitchen experiments!  I had made that Chicken Pot Pie at the beginning of this past spring and my family STILL talks about it.  Goodness!  You make 15 great new recipes and one total flop and what does everyone remember??  

Anyways, when my daughter made this recent request for us to please create a healthy apple pie together, I wondered about making a crust without shortening?  I know that some people do use butter which would be a "clean" choice.  Shortening is NOT!  I personally do not have experience with a butter pie crust recipe anyways... So the search was on to find something that would work for the way that we eat these days.  I looked at a variety of clean eating crust recipes online and kept having flashbacks of the scary chicken pot pie/biscuit episode!  I pulled inspiration from a few areas on the crust.  The apple filling is 100% my own thing that I just put together.  When we make pancakes here, I use my Ninja processor to pulverize Quinoa flakes into a flour of sorts.  I thought that it would be neat to incorporate this along with a traditional whole wheat pastry flour.  

Yesterday I purchased something that is entirely new to me ~ "Organic Coconut Palm Sugar".  It is nectar from pure coconut flower blossoms.  It is a natural sweetener that is low glycemic (very cool for a "sugar" to now give anyone that high/crash effect!!) and high nutrient; marked by magnesium, nitrogen, zinc, potassium, calcium and amino acids.  I typically use raw honey as our only sweetener here at home.  But I just couldn't picture how I would thoroughly combine it with all of my apples for my deep dish 9" pie plate??  I wanted something that I could sprinkle.  The Palm Sugar did the trick!  With a total of 5 tablespoons going into the entire pie, I am fine with using this ingredient from time to time.

"Healthy Apple Pie"
* This recipe fits well within a 9" Deep Dish Pie Plate and will serve 8-10

This apple pie is made in a way that is more healthy than a traditional apple pie.  But this is still a dessert!  In our family, we call these things a "sometimes food".  Watch your portion size and do not go overboard with eating apple pie all of the time!  

If you are following the 21 Day Fix program, this is not too far from your nutrition plan.  If you are in the lowest calorie target category of the Fix, the coconut oil in this recipe would go beyond the official limits on your allotted teaspoons. The other calorie category ranges would be pretty close on teaspoons scheduled for the day due to the coconut oil used in the recipe. As a "once in a while thing" this apple pie is much better than many other dessert options. Other than the coconut oil being above your teaspoons for the day, the rest is pretty much Fix-friendly. The apples fit within a purple. The crust fits as a yellow. And the only sugar is Coconut Palm Sugar which is a low glycemic and high nutrient food. This ingredient is the only one that is not included within the 21 Day Fix plans. But an entire 9" deep dish pie has 5 tablespoons of the palm sugar. If you slice it conservatively into 10 servings or go for a more traditional 8 slices, your sugar intake is still not going to be anything crazy. Everything else is just spices, lemon juice, and a sprinkle of sea salt!

Preheat oven to 400.   

Crust Ingredients:
1 1/2 Cups Whole Wheat Pastry Flour
1/2 Cup Quinoa Flakes (processed into a flour)
1 Tablespoon Palm Sugar
1/4 Teaspoon Sea Salt
2/3 Cup Coconut Oil (as a solid)
3-4 Tablespoons Ice Water

Begin by placing your quinoa flakes in a food processor.  I use my Ninja.  Pulverize them into a flour.  You will still have a bit of "texture" remaining with this flakes.  This is what you see as the specks visible in the ball photo above.  Next add your whole wheat pastry flour, palm sugar and sea salt.  Once your dry ingredients are combined well, incorporate your coconut oil.  Mix gently and do not overwork in such a way that your dough becomes tough.  Finish by adding 3-4 tablespoons of ice water one tablespoon at a time.  Mix dough with your hands.  It will not be very sticky.  Roll into a ball and cover with plastic wrap.  Place in your fridge for 10-15 minutes.  

** If you leave your crust in longer or if it begins to set quickly, you will want to microwave it for 10 seconds or allow it to come up towards room temperature prior to rolling it.  

Divide your ball into a 60/40 (not quite half and half) split.  Take the larger ball and prepare to roll!  The rolling step went very well here.  I used wax paper above and below and a silicone rolling pin.  No additional flour of any sort was needed.  The NEXT step is where we ran into some trouble.  Perhaps a sprinkle of flour would have come in handy??  Now, a little disclaimer here.  My 5 and 7 year old were helping with EACH part of the pie-making process.  They talk to me all.day.long.  So when I went to peel the crust from the wax paper and into the pie plate, things did not go perfectly.  They were like two commentators giving a play-by-play of some shocking Olympic mishap.  At the same time, they were eagerly reaching in with all four of their hands with a goal of assisting me!!  I did get about 80% of my Pampered Chef Deep Dish 9" Pie Plate covered in that initial move from wax paper to dish.  But as you can see in the photo just above the recipe, some patchwork was needed for both the bottom and top crusts.   My stoneware does not require any sort of surface preparation.  The coconut oil does the trick with making this pastry not stick to the dish.    The pie baked beautifully and came out of the pan easily when it was time to serve it this evening.  If the crust had not come through so nicely in that aspect, I would not be blogging the recipe as is!  We would be doing another experiment with it at a future date.  But this crust was delicious and is certainly a keeper! 

Filling Ingredients:
6 Cups of Apples Sliced Uniformly Thin (today we used 9 of the "Paula Red" apples) 
Juice of One Lemon
4 Tablespoons of Coconut Palm Sugar
2 Tablespoons of Ground Cinnamon
1/2 up to 1 Teaspoon of Ground Cloves (use more or less depending on taste)
Dash of Sea Salt
1/8 Cup of Whole Wheat Pastry Flour 

Place your apples in a large bowl.  Top with freshly-squeezed lemon juice.  Sprinkle with dry ingredients and toss to coat.  Add filling to pie dish that already has the bottom crust in place.  Top with strips of remaining crust.  You may sprinkle with bit of palm sugar if desired.  The crumble effect that you see in my recipe photo came through the kids literally adding crumbs of crust on top of my lattice.  :) 

Bake at 400 for 10 minutes.  Reduce heat to 350 and bake for an additional 35 minutes.  I kept an eye on my crust here but it did not become overly-browned.  I was using a rack in the center of the oven.  Check your crust and cover edges with foil mid-baking if necessary.  

Allow pie to cool on a wire rack.  Serve and enjoy!!

Story of a Family Sweet Tooth?!?


I remember back when my sisters and I were young girls.  We would drive a short distance to go and visit my Dad's parents.  And every so often we would be angling for a trip to Dairy Queen!  This was in the little town of St. Marys, PA where DQ is still only open certain months of the year.  Back in those days my parents were not in a position to spring for DQ every time one of us girls (or our Dad!) wanted a treat.  And that was probably for the best!  But we knew that if we asked our Grandpa Neizmik (our dad's dad), the answer was pretty much always YES to DQ.  We had it all figured out that the key was to send our youngest sister Rachel (she is 6+ years younger than me!) over to where Grandpa was sitting on the couch.  She would sidle up in between his wheelchair and the coach (he had been paralyzed in a construction accident while in his 40's) and would ask him THE question... "Grandpa, is your sweet tooth bothering you?"  And then he would reply that it was indeed and why not send our Dad out to DQ for ice cream?  He would ask Grandma to go and get some cash from his wallet which was kept in a kitchen drawer.  And off to DQ we would go!  Cherished family memories and a frozen treat!  Everyone had their favorites and ordering was quite simple!  



Fast forward through the years and ice cream has ALWAYS been a part of our family gatherings and celebrations!  When our family (sparked by my sister Rachel and extending out through my other sister Bethany plus myself and our parents!) began eating clean, the ice cream had to go!  Not that we couldn't still enjoy a bit once in awhile, but the frequency needed to be significantly reduced.  But how would we replace it?  And with a young nephew of mine who experienced migraines whenever consuming dairy, "Yonanas" entered the family picture somewhere in there!  Now less than a year later and the five of us adults are somewhere around 170 pounds less in total weight and we are just not really missing the ice cream very often these days!  We just feel better while staying on track with our healthy new lifestyle!  And this is where something like Yonanas is just the thing! 


Within my own household, we had borrowed my parents' Yonanas machine after a family get-together.  The kids were hooked!  But it was eventually time to return their machine and around that time my 8 year old (very basic!) blender broke.  Correction, it had been "breaking" for a couple of years and was now completely DONE.  I had never had a food processor and was very interested in adding one to my kitchen.  So when I came across a great deal on a Ninja system similar to this one, it was a simple enough decision.  But what about the Yonanas??  A friend had told me that she made something similar in her food processor and so we decided to give it a try here at our place.  Success!    

To make the simple Cocoa Bananas pictured in this entry, here is what you would do:

1) Slice five (peeled) ripe bananas into quarters and freeze them.  They do not need to be overly-ripe but the peel should be spotted in appearance.  They should be in the freezer for at least 3-4 hours but could also be kept in there for a month or more!

2) Place these bananas in the bowl of your food processor.  Sprinkle with 3-4 tablespoons of baking cocoa and allow to sit for 12 minutes.  This will allow the bananas to thaw to a consistency that will be perfect for blending/whipping.

3) Pulse and then whip the banana/cocoa combination. At first you are just going to see what appears to be finely chopped bits of banana flying about the bowl.  Turn off your machine and scrape down the sides and blend again.  Before long you will see a creamy swirl begin to circle around the bowl of your processor.  You may need to stop and scrape down the sides again.  The entire process takes only a minute or two from start to finish!

4) Scoop this treat into serving dishes and enjoy with whatever topping you like!  My own favorites are chopped walnuts and unsweetened flaked coconut.
